Cheddar and chive scones

Full disclosure - I haven't tried these yet. They sound amazing (has anyone else had the cheddar/chive scones from Nordstrom Cafe? They're delicious! This recipe reminds me of them) and not too difficult to bake. Posting the recipe here so I can refer back to it when the time comes to make these.

Makes 12
  • 1/2 cup milk (plus 2 tablespoons for brushing over scones)
  • 2 large eggs
  • 2 tablespoons finely chopped chives
  • 2 cups unbleached all-purpose flour , more for rolling out biscuits
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 tablespoons (3/4 stick) cold unsalted butter
  • 1 1/2 cup grated sharp or aged cheddar , divided

Preheat oven to 425°F. In a small bowl, whisk together 1/2 cup milk and eggs until blended. Stir in chives and set aside. Blend flour, baking powder, salt, and black pepper in a food processor or large bowl. Add cold butter and pulse, or quickly blend with your fingertips, until mixture resembles coarse meal. Do not over-mix. Add 1 cup of the grated cheese and pulse just to combine. Add milk mixture and process just until moist clumps begin to form.

Turn out dough onto a lightly floured surface and shape into a ball. Cut dough ball in half, then flatten each half into an 8-inch round circle, about 1/2-inch thick. Cut each circle into 6 wedges, as you would cut a pie. Brush tops with milk and sprinkle with remaining 1/2 cup of cheese. Place on a nonstick baking sheet. Bake for 12 to 15 minutes or until golden brown.

Sour Cream Coffee Cake

This recipe comes from Grandma/Nana/Flo/Mom/Mana.  She said it was one of their favorites more than four decades ago. It is delicious and very similar to a coffee cake available at the Corner Bakery.  She said that the wonderful aroma that fills the house as it bakes is tempting her to try it again!

3/4 cup chopped walnuts
3/4 cup sugar
11/2 tsp. cinnamon
Combine in a small bowl and set aside

3/4 cup  butter
1 1/4 cups sugar
3 cups all  purpose flour
1 1/2 cup sour cream
3 eggs
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. vanilla

Beat butter with sugar until light and fluffy. Add eggs, and vanilla, beating well.  Combine dry ingredients and add with sour cream.  Beat well.  Grease 10 inch tube pan spread half of batter in pan. sprinkle with 1/2 of nut mixture . spread evenly with rest of batter and sprinkle with rest of nut mixture.  Bake 60 to 65 minutes at 350 degrees until cake pulls away from side of pan.  Cool completely before removing from pan.

Auntie Mary's Irish Brown Bread

This is Mary McIntyre's authentic Irish brown bread recipe, sent to me a few years ago by her niece Grace Galligan Dunleavy!

Dry ingredients:
1 cup flour
3/4 cups whole wheat flour
2 tbsp oat bran
1 tsp wheat germ
1 tsp baking soda
1/4 tsp baking powder
1 tbsp brown sugar
1/2 tsp salt
1 tbs sesame seeds

Wet ingredients:
1 egg
2 tbsp olive oil
1 1/2 cups buttermilk

Preheat oven to 400 F
Combine dry ingredients. In a separate bowl, combine wet ingredients.
Using a fork, slowly combine wet and dry ingredients.
Pour into circular cake pan or deep rectangular pan (brown bread is only sold in these shapes in Irish grocery stores!).
Make an X across the top of the batter and sprinkle with more sesame seeds.
Bake until toothpick comes out clean, around 50 minutes.

Amazing accompaniment to tea. Goes great with jam, butter, ham, or cheese. Slainte!

Sue's Sticky Rolls

With Christmas coming on Friday I am already getting excited to enjoy a holiday brunch with my little family of three (almost four). In addition to the traditional baked strata I am planning to make Aunt Sue's Sticky Rolls. After calling Meghan, Mom, Sheila and Grandma Moore looking for this recipe I realized that I had it in a family recipe book Grandma had prepared for me before my wedding! Meghan requested that I post this on Sister Kitch'n so we always know where to find it!

Spray bundt pan with non-stick cooking spray.
Sprinkle bottom of pan with 1 cup chopped pecans.
Add 20-24 frozen Rhodes rolls.
Sprinkle with one large box of cook & serve (NOT instant) butterscotch pudding.
Drizzle 1 stick of melted butter over everything.
Sprinkle one cup of brown sugar and some cinnamon on top.
Add another cup of chopped pecans.

Cover with plastic wrap and a towel. Leave overnight in a closed oven to rise (but don't turn the oven on!). In the morning, remove towel and plastic wrap and bake in 350 degree oven for 20-25 minutes.

As soon as it is done, flip over from pan to serving plate.

Merry Christmas!!!
